An Interview with Peace Joy & Oil


I decided to interview my friend Stephanie over at Peace Joy & Oil.  Stephanie and I have 5 year olds that are adorable friends so we try and schedule as many playdates (aka, adult conversations) as possible.  Hope you enjoy meeting Stephanie.  Check out her blog as soon as you get a chance!

Who are you?

Stephanie Heady, wife to Chance (my High School sweetheart); mom to my favorite 3 kids in this world, Christian (12), Reed (9), Chloe (5).  I love The Lord with all my heart, soul and strength!  I love to watch my kids play sports.  I love to be together as a family whether that means at the dinner table, a sporting event or getting ice cream.  I also have a passion for ending human trafficking and helping friends and family find healthier alternatives.


What do you do when you are not taking care of the kids?  

Recovering...ha! That is a hard question Cat.  I spend a lot of time doing laundry, grocery shopping, cleaning that is technically for my kids.  I spend the rest of my time usually on the computer.  I love to create graphics, powerpoints, and write on my blog.

What is your favorite oil?



What has been a good benefit of using the oils with your family?

Health!!!  2013 was a very hard year for my son Reed.  He was sick practically all year.  He would ask me why he was always sick.  When I found out about oils I knew we had to give them a try for Reed.  He has been healthy ever since!!!

What is your favorite Young Living product?

Ningxia Red - Antioxidant drink!  AMAZING!!!

Do your kids like using oils?

Yes, they do and they talk about them to friends, which always cracks me up.

Does your husband think you are crazy?

He did for about a year.  He is just now coming around to see that they work and even asks for them now instead of medicine.  (He was on board from the beginning to try them on Reed)

If you could do anything to help change the world what would it be?  

End Human Trafficking!!!  The Lord pressed upon my heart a couple years ago that human trafficking was happening all around us.  He even provided a way for me to travel to India with Rahab's Rope ( to work with women there.  It was a life changing trip.  

What is your favorite part of being a part of the Young Living business?  

I never dreamed that I would have a Young Living business!  I loved the product and people started wanting some so I would tell them how I got my oils and before I knew it, bam...I had a small business.  My favorite part is the friends I have made and get to do life with now.  We are one big Oily Family.  It is also so fun to meet someone new and find out they are oily too.

If people wanted to start with just one thing- what would it be?

My favorite, Peppermint!  I'll warn you though you won't be able to just try Peppermint though.  You will want lemon, lavender, frankincense, Joy, Thieves,....  Cat you should probably tell them how to get the Premium Starter Kit!  This is how I got started and I am a bit of a tight was, so I'll tell you it is a great value.

Love Letters to Essentail Oils

I’m a huge dork (no surprise there!).  I decided to write letters to my oils just like I was thinking in my head.  I love them so much, they need to know that!  So here’s round one of the series.  Some of my favorite oils !

Joy!  I’m diffusing this as I type.  It sounds dumb but it puts me in a better mood.  I put it on my ears, diffuse it, put it on my wrists, and I even made a room spray to spray around when I need a boost.

Okay, so tranquil smells great and I keep it beside my bed to roll on for sleeping.  It’s supposed to be great for calming too but I just use it at night.  Then I finally figured out I should try it on the kids when they are having trouble sleeping.  It worked great!  Tranquil for the win!

So everyone knows Frankincense is great.  But sometimes we forget to use it.  It’s so precious and a little expensive.  I’ve started to use Frank for all kinds of things- bug bites and blemishes and coughs and aches- it works every time!  Don’t forget about your Frankincense!

Love me some motivation.  It’s a great oil, smells good and gives you that extra boost of energy to accomplish things!  I love accomplishing things!

Raven!  I want to sing “that’s so raven” every time I open this bottle.  If you deal with respiratory stuff often, you need a bottle of this!  This oil smells great and I love diffusing it!

En-R-Gee.  I love this oil!!!  I use it every morning and it helps me wake up a little bit.  Then I may use it again late in the afternoon if needed.  I don’t know how it works, but it works.  I put it on my forehead and my wrists- some people like to put it on their feet.

Adoption Party

I waited 15 months to have this party!  I even skipped having a 1st birthday party for her so I could focus on this.  I wanted to celebrate her adoption!  As with most parties- I had this planned in my head for a long time.  And I bought her shirt and her bow before she was officially Zoe.  Some things you just know!

Our church has a great patio where we could have the party.  It really took a village to pull this off.  I’ll try to thank everyone who helped because we really couldn’t have done it alone!

I think this picture was after the party was over- June in Texas- I was super sweaty!  But don’t mind that.  My friend Julie wrote this chalkboard for us.  Zoe’s bow… it looks like a dinner plate on her head.  I love it!

I hired some models to stand at the entrance of the party.  Every good party needs models.
Bella and Zoe enjoying the AC!  Bella is Rene’s beautiful daughter and Rene is the photographer who took all these photos.  check out her company Roots Photography and hire her immediately for your family photos!  She also takes our family photos AND we are going to Portugal together.  Rene has the biggest heart ever!!!  She didn’t think it was enough to take pictures so she and her husband also smoked all of the meat for lunch!  
My salsa is NOT world famous- but a couple of weeks before this event we had VBS.  I made the salsa for the VBS workers and they were practically drinking it with a spoon.  It’s as if they had not eaten in days.  So I made it again the next day and declared it famous.
Good signage at a party is important! 
My friend Anna did the flower arrangements.  I had collected the tea tins they are in for about a year but at the last minute doing flower arrangements made me want to cry.  I can do lots of things but flower arranging is not one of them! 
I made the little straw flags for the arrangements.  Well, originally I was going to make them for all the drinks but I didn’t have time for that!
The fans and lanterns were left over from my sisters wedding.  The paper was some wrapping paper I found in my stash- I had picked it up from the dollar spot at Target years ago.  The tea tins are from my favorite kind of tea.  If you are a tea lover, check Harney & Sons brand out.
A friend of ours came and fried things with his giant fryer.  This stuff is delicious and I even had him fry some apples so it would be healthy.


My mom had this fabulous cake made.  It tasted as delicious as it looked! 
I got her shirt from THIS SHOP on etsy.  I had purchased a “5” shirt for Cason’s birthday and asked if she could do a custom one for Zoe.  She did and it’s wonderful!  You can’t really tell but it says Zoe Cate on the side and a big Z on the front.  They are the softest, best shirts everrrrr.  I highly recommend them. 
I got her bow from THIS SHOP.  I’m pretty sure I need to buy all of these bows.

The kids had a great time!  My friend Michelle brought the washer pit for an activity and the sand volleyball courts served as a great way to keep the kids occupied while the adults sat in the shade. 

I had so much fun planning and hosting this party!  I hope you enjoyed the virtual tour!

There were so many people that came to help decorate and organize.  Sabrina, Paige, Lauren, Anna... my mom and sister are always a huge help for these crazy parties I want to throw.  Thank you, thank you.

Einkorn Wheat Chocolate Chip Cookies


A few months ago, Young Living released Einkorn Pancake Mix at convention.  I was so excited about this because most of the baked goods I make these days are Paleo.  And while they are good, they just are not the same as traditional flour baked goods. 



This mix is great for pancakes and waffles but I was hoping to make more.  As I read the list of ingredients in the mix- I realized that it is just a blend of flours, not a traditional baking mix with sweetener and baking powder already in.  So, this opened up a whole world of possibilities.  The other great thing about the einkorn mix is that it has an extremely low gluten percent.  So, most people who have difficulty with gluten are doing fine with this.

There’s a ton of cool stuff about why Einkorn is great.  It’s a wheat that has not been altered or created into a hybrid.  There is a book about it but I need to read it so I can give a full report.

Now for the recipe!  I love chocolate chip cookies  and I want to eat them constantly- but if you are going to do that it’s probably better to not fill them with processed flour and sugar and other junk.  So, this recipe is altered a bit from my favorite cookbook Against All Grain.

  • ¼ cup palm shortening, ghee, or grass-fed butter
  • ¼ cup coconut sugar
  • 2 tablespoons honey
  • 1 large egg, room temperature
  • 2 teaspoons vanilla
  • 1½ cups Young Living Einkorn Wheat Pancake Mix
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 1/2 cup dark chocolate chips (buy the best chocolate chips you can- it’s totally worth it.  For the love, don’t get milk chocolate)


  1. Preheat oven to 350 degrees F.
  2. Mix wet ingredients then mix in dry.  You can use your stand mixer or hand mixer
  3. Stir in the chocolate chips by hand.
  4. Scoop into small balls and place on cookie sheet- might want to flatten a bit because they don’t spread much. 
  5. Bake for 9-12 minutes, until slightly golden around the edges.

These were delicious! 

However, if you want to eat chocolate chip cookies constantly it’s hard to make this large recipe all the time.  So, I did a little digging and found a single serve chocolate chip cookie and gave it a try.  It was super amazing.  I altered the recipe to take out the sugar.  Please consider getting rid of your white sugar.

2 T. Butter

3T. Coconut Sugar

Pinch Salt

1 T whisked egg- Just take an egg- mix it up with a fork and measure out a tablespoon.  Save the rest so you can make this cookie again the next night or for scrambled eggs in the morning.

1/4t. vanilla

1/3 cup Young Living Einkorn Wheat flour

1/8t. baking soda

1/4cup chocolate chips (see note above)

Mix it up and bake at 350 degrees for about 12 minutes.  If you make one giant cookie like I did- just check it after 12 and make sure it’s done. 


I didn’t get a picture after the cookie baked because I wanted to eat it.  So I did.

Mid-Century Side Table Makeover



About a year ago a friend found a dresser and a side table at a garage sale and it was exactly the kind of dresser I had been looking for to use as our entertainment center.  Of course, I didn’t document the before picture but if you look to the left of this adorable boy, you can tell how it turned out. 


So after the dresser was done the side table sat in the garage for a year because we didn’t have time to get to it.  I had a vision though…


A friend sanded it for me to save some time.

I painted the doors and drawer white and stained the wood all the way around and the legs.  Staining furniture was apparently new to me because I did it wrong a few times and had to re-do it.  Even with the unprofessional stain- I really like how it turned out!
